Coconut sugar is a type of sugar obtained from the process of concentrating sap, which is the liquid collected from tapping coconut flower clusters.
There are several types of coconut sugar, namely molded coconut sugar and granulated coconut sugar, often referred to as palm sugar which is a crystalline form of coconut sugar.
Granulated coconut sugar has several advantages over molded sugar, such as small particle size and low moisture content, which gives it a longer shelf life. It is more practical to use, easily dissolves in both hot and cold water, and can function as a flavor enhancer.
